Park Family and Cosmetic Dentistry Patient Appreciation Party

We wowed you last year with the Vietnamese Spring Roll recipe. We decided it was time to wow you again.

This time Park Family & Cosmetic Dentistry wants to share their Fried Vietnamese Bananas Recipe.

Ingredients:


  • Vietnamese White Flour - optional

  • Tapioca Pudding Powder

  • Water

  • Vietnamese Bananas – best if they are ripe (those small mini sized bananas you see at the store and wonder when Chiquita started making miniature bananas!)

  • Oil for deep frying


Directions:

Heat oil in either a deep pot, deep fryer, or how Dr Long did it: in a pan over a camping propane cooker.

Mix equal parts flour and tapioca powder in a medium size bowl, or can just use the tapioca powder. Add enough water to make a batter similar in consistency with pancake batter.

Slice bananas at an angle so that the cuts do not produce coin style banana slices, but elongated banana slices.

Dip banana slices into the batter and coat well.

Add batter coated banana slices in hot oil and fry until golden brown on both sides.

If coin style slices were made the batter will balloon up like a donut and it will be difficult to brown on both sides because the donut will continue to flip itself over and the center won’t brown.
